If I want to take 5.1 (or higher) digital audio signals in formats like DTS HD Master Audio, as well as HD 1080p/deep color/high speed (category 2) video from my Oppo 93 blue ray to my Anthem MRX receiver, does one HDMI cable handle that, or do I need to use both HDMI input/outputs (or should I be using the separate digital audio port?)

Nope, you don't need to use both HDMI outputs. The typical setup would be to just run one HDMI connection to the receiver and let the receiver drive the display. For people that have a non-3D capable receiver and want 3D for their display, then using two HMDI outputs from the OPPO allows (connection 1) to send the audio to the receiver and (connection 2) to send 3D video to go to your display.
