Where to rough in ceiling projector, without having a projector chosen?

I have a room in the basement, roughly 10x23 feet. I plan on making it a play room by day, and a theater by night, though the theater part may wait a while.

Since I am about to drywall the room, I want to have a rough in for a ceiling mount projector, with a conduit and power run to it. The question is, without having a projector picked out, what sort of distance would be safe to mount this at, compared to where the screen would go?
Also, in a room this size, should I look into running any more speaker wires than for 5.1 surround?.. does the size justify 7.1?

P.S. I went 7.1 in a room a little smaller than yours. Is it worth it, I don't know but I am happy with the results.

I will try and prep for 7.1, I have the wire, so why not. I will try and make the wire hidden, until I actually start mounting speakers.
I will see if I can figure out a good spot for the power, maybe do as was suggested and run a wire down the length of the ceiling and reach up and grab it, when I know where it has to be.
