So i'm curious at which format is better matrixing the height ambiance channel from a standard 7.1 or below source?

Audyssey DSX Height or Dolby's PLIIz Height?

DSX doesn't matrix ambience, it uses the contents exclusivelyfrom the front L&R channels to generate proscenium reflections based on concert hall acoustics. By comparison, PLIIz extracts decorrelated (out of phase) ambient information from the surround channels to feed the height speakers.

I see, I wasn't aware but I get the idea of what you are saying.

So in your opinion which would be the more accurate and better method?

You should have included Yamaha's Height channels as they have much more experience with this than either of the 2 you mentioned. They have been doing height channels for over 12 years. My old RX-V2095 had these speaker outputs although I never used them. The new models also have them and why they don't offer DSX or DPL IIz (just DPL IIx).

Once again I don't use them but for years Yamaha has always got the thumbs up for great height imaging with their height channels.

More accurate to what? If I want to feel like I'm listening in a larger room, then I would use DSX. If I want surround ambience to come from above the front soundstage, then I would use PLIIz. I doubt that film makers and their sound mixers intended for either of those effects, so I'm not sure whether I'd consider either one "accurate".
