Is there a way to have both 7.1 surround and zone 2 speakers if I use an external amp for zone 2?

Yes ... connect a set of RCA cables from the Zone 2 pre-out jacks to the external amp inputs (or analog inputs on an old AVR) and connect the speakers to the external amp (or AVR) speaker posts.
