Total noob home theater projector questions

For the first time I'm rolling around the idea of doing a projector setup.

I'm thinking of a screen which is 72" diagonal. I know home projector guys love HUGE and everyone will probably tell me to get 100", etc. But this 72" diag screen would fit on my wall perfect.

Room is 15 feet deep.

Here's my question, and again - total noob here. I have zero experience with projectors. So - do projectors image quality vary with screen size? I'm thinking that maybe they are made to really need a bigger screen than I can fit on my wall.

Or will a projector work fine on a 72" screen?

Any comments welcome.

PS: Another thing I wonder about....do really long (50 or more feet) hdmi cables compromise PQ? I imagine I'll have to run a cable from one end of the room to the ceiling mounted projector.

About size. Assuming you take 0.5 meters for couch, display width will occupy ~22 degrees of your field of view. In my opinion, that is about as low as you want to go.
About angular resolution, assuming it's 1080p projector and content, you'll get ~85.5 pixels per degree [of your field of view]. That's not bad (you'd benefit with angular resolution up to ~200 pixels per degree) and you shouldn't worry about seeing pixel grid or any pixelation.
