Tough Room! Help with Rear Speaker Placement

We have a tough room for home theater: measurements are 16.5' x 16.5', the right side is fully open leading to the kitchen; the rear is a full run of large glass windows and french doors.

So - where to put the speakers in our room? Left, right and center were easy but we're stumped with our options for the rear. I have read extensively the official specs for 5.1 and 7.1 placement as well as AVS primers on speaker placement; unfortunately our room's unique design makes it difficult to know how to proceed.

Here's what we're dealing with for the room:



Questions:
1. Where should we place the main rear speakers (12" H x 9" W x 10" D)? Should they go just behind the sofa or the far corners of the room, since we have other chairs to consider?
2. Should we go for 5.1 or 7.1? We have some extra satellites 11 H" x 6.5 W" x 6.375 D" which could either be placed at the sides (not practical where the room opens to the kitchen) or the rear somewhere. If in the rear should they go above or below the windows? Since this is not just an AV room my wife is concerned how it will look if we mount above the windows. I'm willing to sacrifice sound for looks in this one area...
3. We have an extra center channel (21" H x 7.5" W x 10.5" D). Will we get that much benefit from using it in the rear? And again, should this get mounted above or below the windows (what would look best for the wife)?

I don't know whether the brand/model of the speakers and components matter but if so here they are:
  • Ascend Acoustics CMT-340 L & R fronts and center
  • Ascend Acoustics CBM-170s (rear probably but where?)
  • Ascend Acoustics HTM-200 satellites (front or rear?)
  • extra Ascend Acoustics CMT-340c center channel, possibly for rear???
  • Panasonic 65VT50 HDTV (12.0 - 12.5 feet viewing distance)
  • Oppo BDP-93 Blu-Ray player
  • Yamaha RX-A3000 Receiver

I'd hang the rears in the back corners of the room close to the ceiling, tilted downward and towards the opposite room corners. A room that small might not benefit from 7.1, but if you go with them I'd hang them on the side walls near the ceiling 1/2 to 2/3 of the way back in the room, aimed at the LP. Do not use an extra center in the rear of the room.

Based on the placement of the couch (and assuming it s the main seating), I say focus on 5.1 and save some money or put it towards other gear.

Thanks for the advice. I'm concerned that the CBM-170's are too large to hang off the walls near the ceiling. Since you think the center channel should not be used, what do you think about using the *two* center channels as rears (placed on stands) and use one of the CBM-170's as a center channel?

Regarding 7.1, I don't have a side wall on the right side, since the room opens up the the kitchen area. Is there an alternative?
