Just thought I'd comment on one aspect of your original post that has yet to be mentioned: wireless speakers. I don't really understand why people go there. Wireless speakers aren't truly wireless unless they run off batteries... in which case, you'd have to replace them each time they run low (and remember to turn them on and off to conserve battery). The other so-called wireless speakers still need a power cable, so while they are wireless in terms of audio signal, they still need to be amplified.
So getting that out of the way, I think the rest of the responses are spot on in suggesting in walls or sound bars as the most sensible way to hide speaker cabling.
One last point, which might be rather offensive but here goes... she is your girlfriend and already making such demands? If this is the path you are heading, don't think of going anywhere mid-high end, as it is all a compromise anyway and you will resent her later if you spent a good chunk of money on something that you didn't actually really want but had to compromise on to keep her happy.
