I have been kicking around a new HTPC or server or PC build for a few months now, and I finally decided to just ask opinions. I have been reading threads and could not come to a consensus, so I decided to ask the experts and the opinionated how they would proceed.
Here is my current situation: I have several movies saved to a 1TB NAS. I have about 32GB left and haven’t begun to rip blurays yet. Right now, I stream to a laptop and a few WDTV lives (1st generation – cheap player, but for what it is, it seems to play everything). The GUI on the WDTV is beginning to be difficult to navigate with 350+ movies and television shows on the hard drive, so I would like to, eventually, get a better interface. I run MediaBrowser on my laptop, but I am also considering JRiver and XBMC.
So, listed in order, here is what I need in order of importance:
1. Storage – stream blu-ray quality rips
2. Encode – I could continue this from my laptop (i7-2620M, Radeon 6450), but is there any way to offload this somewhere else without breaking the bank?
3. HTPC – better interface than current.
4. Some gaming.
5. Some Photoshop (only if full blown PC option is used).

Ok, to some all of this up:
1. I would love to stay in the $700 - $800 range.
2. I have a copy of Windows 7 Ultimate or WHS 2011 available.
3. My number 1 item is storage.
4. I would want to encode/transcode on the new machine if possible, but better or on par with my laptop.
I hope there is someone who is willing to help, just some other side notes:
1. I may be able to get an i5-3570k for $50 more than the i3-3225.
2. I am not necessarily an Intel guy; I just keep reading that Intel is better at everything except onboard graphics.
3. In fact, I am not a brand loyal guy for anything on these, so recommendations are welcomed and appreciated.
4. I will hopefully be getting better appliances to replace the WDTV lives (Dune, Popcorn, Ceton Echo) so that may change how much processor is needed in the server (option 1&2) to run YAMJ! Or Media center.
5. I am on a wired gigabit network.
