Generally, it would be whacked out time signatures and time/tempo shifts that would require actual COUNTING as opposed to straight "feel" that most players can get by on in more traditional and consistent time signatures. One heavy band that makes "math rock" actually groove & make ya wanna bang your head (IMO) would be Tool, particularly their output after Undertow. Some of the tracks on Metallica's "...And Justice For All" could also qualify.
While not "metal", bands like King Crimson or Battles could also be considered "math rock". I would also place Frank Zappa into that territory.
