Sub Crossover setting Post Audessey Set-Up

I successfully completed Audessey Set-Up on my AVR-1913 Receiver.

Per the instructions I set the Crossover frequequency on the subwoofer to the highest level. Should I leave it at the highest level after setup is completer?

Additionally, does the Audessey set-up setting apply to all playback modes, or just Dolby surround? I am particularly interested to know if it impacts stereo/music playback with my two main speakers + Sub.
