Can someone explain why...

I have my Vizio 60" smart TV hooked to a Vizio VHT510 5.1 Soundbar with sub and rear speaker bia TosLink cable. The soundbar detects the type of signal being input and switches between digital and SRS depending on the signal type. Now what i cant understand is why it sounds better when its in SRS mode than in digital. And it also mainly stays on digital unless the kids are watching cartoons or Disney or something. The movie channels all stay digital mode. Kinda disheartened when iCarly sounded better than Terminator...lol

The TV isn't sending the original audio to the sound bar.

Most sets only output surround off the tuner, any other input is output as two channel stereo, and not very well at that.

As an experiment, connect the optical directly to the source.
