How to arrange 5.1 or 7.1 in-ceiling speakers in this particular scenario ...

Home Theater area is 11ftx9ft, and 9ft high ceilings .... but here's the kicker .... there's only two walls (projector wall, and the back wall where the couch will go ... the sides are completely open, it's a loft-style house).

I've already purchased my speakers:

SpeakerCraft Profile AIM5 One (in-ceiling aimmable speakers)
SpeakerCraft 8.2Bas (in-ceiling subwoofer ... for aesthetic reasons I had to go this route)



QUESTIONS:

(1) I plan to put the front L/R and the rear L/R at the four corners of this space ... for the rears, assuming a 5.1 setup, should I set them up at 90 degrees or slightly behind the listening position (110 degrees)? And, do I aim the sound to hit the head of the person at the center, or above their head?

(2) Is this space conducive to a 7.1 setup? Would it be worth my effort? If so, where should I position the rear L/R and the surrounds? I assume in that situation, the rear L/R should be at 90 degrees, while the surrounds are closer to 130 degrees ... with the projector directly above the center person. Do I aim the speakers at the head of the center person, or over their head?

* both scenarios, the couch is placed up to the back wall, so the center person will be only about 1-2 ft away from the wall at most
