If this is for background music, there are a couple of different ways you can go. First is if the room roughly has a left side or right side, such as for example when someone is at the primary seating position, then you can wire up the room that way. One side would get the left channel signal, and the other side get the right channel signal.
If the room doesn't have a distinct left or right side, such as in places where people would be moving around, it's entirely acceptable to run mono signals. I've seen in-ceiling speakers that have "stereo" tweeters, but they are so close together, I am not sure what additional benefit such a configuration brings.
