Media Server Rebuild OS Advice - Win7/8/WHS or Ubuntu?

I currently have a media server with WHS 2011 + areca 1880 raid card with 36TB of storage.

My server functions solely has a media storage/gathering hub running:
-Sabnzb
-CouchPotato
-Sickbeard
-MakeMKV

Streaming to 3 OpenElec devices

Obviously I don't need much for this server in terms of hardware, but Im looking for as little OS maintenance/rebooting as possible + easy remote access/RDP. I have also never used linux beyond some desktop usage at school, but Windows 7 is 4 years old, WHS is dying/dead and I am not a fan of Windows 8.

New server will be changing to Areca 1882, but same basic CPU/Mobo still.

I would say linux without a GUI but you still want to run makemkv on it then you are stuck with running a GUI. I run ubuntu server with my areca raid card setup. You dont reboot linux for updates only if you update the kernel which for a home user not really needed. my current uptime for my storage server at home is 234 days

Does linux support dynamic ntfs volumes and can it expand these volumes?
