I am looking at getting a pair pair of Paradigm Studio 60s v5 along with either the CC-590 or CC-690 center channel.
Definitely get the CC-690. I've heard both the 590 and 690 in my set-up and the 690, IMO, is a MUCH better CC speaker.
I am also looking at either the DSP-3200 or the Studio Sub 12. My listening is primarily 70% movies and 30% music. ... There is a large price difference between these options so am looking for the best option. My room is a dedicated home theater space that is 10ft x 18.75ft x 8.66ft (WxLxH).
Your room is ~1,700 cu.ft., so it's not very large. IMO, the DSP-3200 isn't worth buying, and the SUB-12 is over-priced. Not sure what your budget is, but options to consider include:
