I was actually bored and made a list of channels which Cox have in some markets,but not in Vegas(bold = ones id love to see):

All the NFL Network HD games have all been shown on Cox here in Vegas on a temporary alternate channel. The SD content is still shown on the regular SD NFL Network channel on 317.
The HD Net channels are a one off for the OC system who was bought by Cox and still offers the pre-existing channel as a Premium paid service due to franchise contracts. It goes against the Cox corporate motto of "free HD" to its digital customers to get HD for no additional charge. There has been some thoughts about offering it to all subscribers as a premium paid channel, but that hasn't ever been finialized between HDNet, Cox, and their customers.
For the record, I've seen most of the channels listed here and many more as test channels... If you want them added, I urge you to go their website and request them at http://www.cox.com/lasvegas/ChannelRequest.asp
This is the only way to give them feedback that they will use when deciding on what channels to add, and they do take written requests as an effective vote for new additions. Cox also seems to take the amount of HD content on a given channel as a factor in adding them. If it's mostly SD content with a few upconverts, then it probably will not get added anytime soon.
