The stereo effect is still around, between every adjacent pair of speakers in your set-up.
We've all heard set-ups that sounded like 5 or 7 pools of mono. Blech! But if you use what you remember from your stereo days, like toeing in your speakers and using room treatments, then you can have as much imaging between speakers as you do at speaker locations. With the lights off, you'll be able image all sorts of sounds without localizing the speakers themselves.
Stereo hasn't disapperard, you've just gone from one pair of speakers (Left + Right ) to several pairs of speakers (Front Left + Front Centre, Front Centre + Front Right, Front Right + Surround Right, and so on around your room). Each two adjacent speakers are still a stereo pair. The more speakers you add, the more stereo you have.
