How To? S-video and VGA outlets

I am going to be doing some renovations in my HT room and have a question. I have a counter in the middle of the second row of seats right in front of the money seat (my seat) where I keep my remote. I would like to add a multi-media jack in the cabinet but have no idea how to. I will be able to run any type of wire needed from the central cabinet to both the projector and the equipment rack. I'd like to have (1) RCA type outlet (video & l/r audio) for an N64 (this is easy enough to do with RG6 cable), (1) s-video & l/r audio for my futre Playstation 2 (again audio is easy enough but how to do s-vid) and (1) VGA outlet so that I can use my laptop to play PC games on the big screen.

SUGGESTIONS PLEASE !!!
