Because youth, or the appearance of it, is what they're selling. Everybody likes to look at young, pretty people, even people who are no longer young and pretty themselves. And it's all about selling, after all. When was the last time you saw an over 30 actor in a commercial? Unless, of course, it was an ad for boner drugs - and even then the not-so-old guy's wife is clearly 20 years younger - or other types of drugs and services marketed specifically to Paleozoic-Americans.
I think with many if not most Hollywood / Music celebs, it's not the need of additional coin that prompts going under the knife .. I mean, did Gene Simmons, Kenny Rogers, Cher, Madonna and others at their wealth level need the money that the perception of a younger look might bring .. ??
I suppose many might like to capture the Fountain of Youth but at my age, I look at it and think of the old Billy Crystal line ... "It is better to look good than to feel good" .. because no matter how you slice it, (pun intended) the body begins to give out
