You have to experiment. It doesn't matter what the A2 is best at, it matters what the combination of A2 and projector are best at.
So you need to watch th same scene several times with the A2 set to 720 output so you can memorize how everything looks... colors, detail, textures, depth, etc. Then switch to 1080 output from the A2 and watch the same scene again noting any differences.
If your "720" projector is really 768, sending 720 from the A2 will cause the 1080 on the disc to be downsampled to 720, then upsampled to 768 by the projector... that's 2 processing steps. If the player is set to 1080 and the projector downsamples to 768... that's just 1 processing step and there should be better results with the projector sendin 1080 but you still have to check visually.
