The PS3 will not bitstream advanced audio formats to your receiver. It will not send advanced multi-channel formats over optical.
Don't fret and worry yourself WHY it can't, it just can't, okay? That's how Sony designed it. Until Sony puts different hardware inside the console, that's how it ever shall be. OF COURSE it would be easier to just output the bitstream (whatever it is on the disc) and let the receiver decode it, but that is not the development path Sony chose. Perhaps short sighted on their part as then they could sell more high end Sony AVR's to decode the bitstreams (for those who are brand conscious and would buy a Sony AVR simply because of the brand name), but whatever their reasoning this is just how it is.
And you'll NEVER get HD audio over PS3's optical audio output EVER, the bandwidth simply does not exist with the standard utilized. The chips used are incapable.

Thank you for your post it was very clear and concise...I think a lot of people want to know this information. The ps3 is hdmi 1.3 not 1.3a which is the version that bitstreams. This is exactly the reason I sold my PS3.

That's good news for me as I'm happy with my current AVR and thus didn't want to buy a new HDMI switching unit just to get 5.1 audio off Fox Blu-Ray discs that use the DTS-HD MA format.
