Sony 36XBR250 (?) Help!!!! Beginner!

Hi,
I just bought a used 36" sony xbr. Everything is in great conditon, except how to use it!!!!
The previous owner had lost the original remote, and bought a Sony RM-V310 remote commander (with programmed buttons). I have absolutely no idea how to use it. I fooled around with the menu & got 6 out of the 80 channels I'm supposed to get. Should I just buy a universal remote? Would that get rid of the pre-programmed info that I have no idea what to do with?
Also, when I bought it, we took a look at the picture and it was nice & clear. We hooked up a Sony DVD Dream System (and got it working finally), but the picture is a little fuzzy. We're just using the basic red/yellow/white cable hook-up. If we switched to an advanced method (S-Video), would that sharpen the picture?
What would I use for that?

Yes, you'll get better video quality with SVideo connections. You might also want to rent/buy a video calibration DVD, such as Avia or Digital Video Essentials, to help you properly adjust your TV's video settings for the best picture.

I'm not too worried about picture just yet. I want to figure out the universal remote that came with it.
It has a TV/Video button, that switches only from Video1 to Video4. After some tinkering, Video1 is the DVD player, but we still have no TV cable channels.

There's a TV/Video button on top of the set that should cycle through all four Video inputs.

I bought this set open-box for $1300 about six years ago and it's served me well.
