I didn't hear back from anyone on my previous question so I fired the same question to the source themselves - Juno Lighting. Here's the response that I got. Figured it might help others as well as myself. In summary it looks like we're good to go on this.

The ICTC113 housing is designed for new construction installation. The housing is meant to be supported by the integral bar hangers which would be nailed to studs or joists. In order to install the housing in the manner you suggest, you would have to remove the bar hangers and devise some way to secure the housing to your 2x8. This would be really more of a remodel type installation. Because the ICTC113 housing is "IC" rated, it can by code, be in direct contact with combustible materials. I have included as an attachment, Article 410-66 from the 05" National Electrical Code as confirmation of this. I think the mounting itself is the biggest issue you would have to deal with.
