I've held off ordering because I simply can't believe the price difference and am wondering if I am insane to spend double the money for a fixed screen of the same material.

The material is not effected by waves in it while viewing your image, so the justification for the fixed screen material may be mostly dependent on your own personal preference really. A bug could land on the screen while rolling it up and could make a mess. If the material develops a crease or wrinkle in it that effects the shinny top layer then you would see that otherwise you are fine.
My fixed screen is not mounted up perfect by any means and sometimes there are waves in it visible when the room lights are on coming from various directions. At other times ( caused by change in room temperature I think) the screen pulls tighter and they are not as apparent with the room lights on.
Long story short... if you can go with a fixed frame it will have a chance at retaining its original shape better like all screens from what I have gathered. There have been a few times I have stood up to look at the screen where there is a dot and a bug flies away. Anyone jump in correct me if I am wrong.
