By "speakers" do you mean "receiver"? Without some sort of amplification, your speakers won't do you any good. Yes, you can convert the two signals, but you might actually be better off going with an RCA connection.
EDIT: Just missed your edit. Looks like you're going for a sub-routed 5.1 system. Again, though, I think those only do matrixed surround anyhow, so just stick with the RCA connections (if those systems have them). Personally, I'd go with a cheap HTiB ("home theater in a box") setup that includes a stand-alone receiver rather than one of those sub-routed systems. Nearly any 5.1 HTiB system with a stand-alone receiver will include at least optical.
