Currently I am running a single HDMI for both Video and Audio to a Denon 4400 in Bitstream mode and the receiver is processing it as Atmos as it should be when watching a disk. Not a big deal to run another HDMI but the less cables the better unless there is a particular reason to run them separately.
The two HDMI outputs are for folks that own AVRs that don't support 4k. In that case you run the video to the TV and the audio to the AVR. If your AVR supports 4k passthrough then you can run the video/audio output to the AVR and then the AVR output to the TV.
