I thought I would revisit this thread to reflect on what I learned actually living with the wired house.
I would say that I am even more happy that I ran more CAT6 than I needed. Though the kids never use the ethernet connections (all wifi), I do regularly when I want to do big files or backups.
I feel like the RG6 was a total waste. I have used exactly one of the wires, and it is only for the cable box in the family room. All of the structured cable I ran was a waste.
And as I mentioned a few posts up, run cat5 for thermostats. I have Nest and ecobee (prefer ecobee) and having the extra wire made it easier to power the devices.
And the rack that I got was too small! But that was easy to fix.
