Surprised more people didn't mention Dunkirk. Excellent cameras were used and great cinematography!

I still think the gold standard is good old Blue Planet 2. Its just one draw dropping scene after another.

Also loved Blade Runner 2049.

Let me take this Q in a side direction and say...

... pick you favorite TV show or movie, get the best quality version (typically blu-ray) and watch on a projector.

Just about anything is worth watch again on your own "big screen".

Star Trek The Next Generation Remastered.

I still can’t believe they went through with this project but I’m SO glad they did.

What to do if you find yourself stuck with no hope of rescue:
Consider yourself lucky that life has been good to you so far. Alternatively, if life hasn't been good to you so far, which given your present circumstances seems to be more likely, consider yourself lucky that it won't be troubling you much longer...

Out of my 200 UHD discs and 1000+ hd blu ray collection, the best ones to look at pq-wise on a 4k projector...in my experience ,would be:

Shot on digital:
Lucy,X-Men Apocalypse,Murder On The Orient Express, Mad Max-Fury Road,Mortal Engines, Pacific Rim-Uprising,Star Trek-Into Darkness

Shot on film:
Blade Runner,The Scorpion King,5th Element, Men In Black,Hannibal,Leon, Crouching Tiger..,The Patriot,Star Trek(2009) , Saving Private Ryan

There are quite a few stunningly looking standard HD blu ray beating many UHD discs...in this category i would mention: Terminator (1984), Aliens(1986), Revenge Of The Sith, Rogue One, Lawrence Of Arabia, Ben Hur, Cinema Paradiso, John Carter, Waterworld (Arrow edition)
