It's mostly important to get the projector's brightness set a little too high and contrast a little too low so you don't have a ton of crushing due to most digital camera's having the ability to capture only 300:1 contrast while any non-LCD projector should be capable of 2X that amount..then you just have to get the camera's white-balance somewhere nice.

If you're really trying for a fake-out eye-candy shot, let a little black clip on the camera as well as a little white and crank the sharpness a little..it'll still look muted and grainy in person, but better in the shot.

If you want an actual honest picture, you'll have to raise brightness until the camera sees the black-level that you normally see with your eyes and then lower contrast until it isn't clipped..then make sure white-balance is set on the camera to show what you see. You might also have to boost or cut color intensity somewhat to compensate for any boost/cut the camera shows.
