All your choices are fine except for the HDMI cable. I know it says "4K" but to ensure 4K with HDR gets passed through you need "certified premium" - https://www.monoprice.com/product?p_id=15427 - for every HDMI to HDMI connection in the your path (source -> AVR -> display).

HUGE margin for stores on cables. They will ALWAYS tell you that and always try to sell it to you. Check out Monoprice.com for your cable needs, though I've purchased some Mediabridge stuff as well. Longer speaker cable runs typically require smaller # gauge wire (equals bigger wire). While Monoprice sells on Amazon, if you're buying enough direct from them, even with shipping vs. free Prime on Amazon, it will wind up cheaper.

Also, be prepared for how big the Emotiva Airmotiv C2 is. :-)

If you're only going from AVR to display/tv, yes. If you have a 4k Blu Ray player, you need another to go from it to the AVR. I'd order two (their cheap) - and make sure you order ones long enough.

That is a good guide to follow though some other guides suggest rear speakers at 2 foot or so higher than ear height when seated.

That is what I have and it works quite well as it minimizes localization when the rears are closer to the couch than in that diagram.
