Wireless and wired “mix”

I currently have a 5.1 Klipsch speaker setup with my HT system. If upgrading to a 7.1 system, is it possible to use two wireless speakers for the two additional speakers?

I know of no AVR that uses wireless speakers for the 7.1 channels. Current 2018 Yamaha AVR's let you use their own MusicCast 20 ($459/pr) and 50 ($999/pr) speakers for the 5.1 surrounds, not the 7.1 surrounds.

Otherwise you'd have to buy a Rocketfish wireless kit and then connect a pair of passive speakers to it. Not quite sure if that's what you're looking for.

Also not sure how well they work in regards to signal delays etc.

I use the Rocket fish wireless speaker kit for my surround channels. They work fine. For delays I just added 20 feet to the tape measured distance. My AVR is very basic without auto calibration.
