7.2 vs 5.2.2?

I recently purchased where some previous owners installed some in wall/ceiling Sonance speakers in the den which will serve as our main TV watching area. The room was an addition above rhe garage so the ceiling is sloped and the side speakers are angled down about 60 degrees from vertical and are at about 6' height. The left rear and side speakers are about 30" further from the center seating position than the right side and rear. I've put a link below to some photos of the space to give an idea of the layout.

The remainder of the setup will consist of a 75" X950g which will be wall manted, aGoldenEar Supercinema 3D Array XL passive soundbar which will also be mounted, a Denon AVR X3400h and I'm still debating between dual PB1000s vs dual PB2000s. There's a subwoofer cubby with an outlet and tunelled rca cable back to the receiver that's 20" high and would perfectly for a PB1000. I could fit a second PB1000 to either side of the TV stand. If I were to go PB2000 I'd have to put one to the right of the TV and set up the second wirelessly, probably in the back left.

All my previous TVs were setup with cheapo powered soundbars so I have no experience with setting up a home theater, but I've been reading up. I almost have all my components so I'm just trying to get some input on what the best configuration for the built in speakers would be. Any help would be greatly appreciated!

Those in-wall Side speakers don't look high enough up to be effective as height speakers, so I would leave them as Sides and do a traditional 7.1 layout.
