While waiting for the pros who actually know what their talking about to chime in, I'll give you my thoughts. I have a 1272 which I currently run off a HTPC (ok, my laptop, but it works great) and a S-VHS VCR (it actually looks good) that goes through an iScan Pro.
When I was setting all this up I asked the same question as you, and this is what I was told. The dish receiver will have an S-video output that I will run into my audio/video controller which outputs to my iScan then with the VGA cable into my projector. You can take the feed right from the dish receiver into the iScan if you'd like.
At first I was wondering about the quality, but when running the S-VHS through the iScan, I was surprised how good the image looks. I use a 120" screen, and 10 feet away I can't see any scan lines. So I'm guessing when I get around to getting a dish system, the quality will be just as good and most likely better.
Now, if there is a receiver with VGA output, that would sound like the way to go. From my research, I didn't find one (but that's not saying much).
