2-12's vs 1-15 or should I build my own?

Remodeling and building a multi-purpose media room, shown below. About 3000 cu ft, and an additional 1000 cu ft in the hall on the right. This room will likely have a hard floor, with area rugs, and possibly a few wall treatments, but nothing too crazy.


I'll be using the media aspects of the room 80+% for movies, and my wife and I are not audiophiles, but want to have a theater room that sounds solid, but don't need 'the best', 'the most', 'killer'... let's just call it more like B+, maybe A-.


I have a theater consultant that recommended dual subs, and thought I might get away with a pair of 10's. This article/'calculator' seems to support that sizing: https://www.aperionaudio.com/blogs/aperion-audio-blog/how-to-choose-a-subwoofer


In talking with SVS and HSU, they recommend a single PB3000 or VTF3-MK5, over two PB2000's or VTF2-MK5's, citing ability to add another later. So that is a big jump from my initial thoughts of dual 10's.


For my needs, would going to the 15"/13" drivers be overkill (when doubled), whereas I could just go with two of the PB2000's or VTF2-MK5's?


I read one of the stickies, and was intrigued by comment on the Dayton Subwoofer with Cabinet Kit. I'd be building a bench about 20-22" deep at the front of the room... could I conceal one or two of these in a cabinet section with just a cloth front, or am I asking for problems acoustically? Doing the remodel myself, the last thing I need is additional work, but having them hidden away could be a big bonus (and therefore no finishing required).


Edit: Would like to keep in the $750-$1100 range in the near term.
