Does the height of the ceiling make much difference when detemining the size of the speaker to install? Speakers will be used for background music throughout house not in a surround situation.

Usually, you should use the largest diameter bass driver you can tolerate looking at in your ceiling. For background levels, bass is important, because you perceive bass poorly at lower levels, and the speakers have to be fuller sounding. Some 6" speakers have long excursion and actually have decent bass, but an 8" driver will generally provide more low-level thumpage.
