7.1 Surround: In-wall/Ceiling

I'm in the process of sifting through potential floorplans for a new house. At this point I don't believe I'll be getting a dedicated HT room, so I'm concentrating on selecting a large family room that will work for me. Most of the plans consist of 3-walled rectangular rooms that are open at the rear (usually toward a kitchen area). I have an HK 635 receiver and want to step up to 7.1 surround, but I'm debating about whether to go with in-walls for the sides and in-ceilings for the rears or in-ceilings for both sets of surrounds. I have a hunch that the sound would be better going with in-walls, but I'm not certain. Anyone have experience with something like this?

About to have a similar situation, except I have four walls and plan on in-ceilings. I was going to do in-walls in the rear and in-ceilings on the sides, but decided to go all in-ceilings for the surrounds. You mind find some of this info useful. What is your ceiling height?
