You would be the one to see a difference. It's subjective really. Yes, 1080p does offer more resolution and a quality TV will take advantage of it. However, whether you'll appreciate it or not is another story.
Personally, I feel that a good 720p signal is almost perfect.
But, TV's over 50" may see more benefit from the 1080p than a smaller TV would.
You'll have to compare the two with similar source material and decide for yourself.
