I know that there are receivers out there with bluetooth that allow a streaming connection to smartphones and mp3 players, but I am looking for a receiver in the ~$300 price range that allows connectivity with bluetooth headsets. Does such a thing exist?

Bluetooth is just a standard. It should pair up with any Bluetooth device if they are running compatible versions.

Will pairing up a bluetooth headset with a bluetooth receiver allow me to hear the content over the headset? A lot of manufacturers state that content can be streamed from a phone to the receiver, but I haven't seen anything that says you can listen to output from a receiver on a bluetooth headset. Thanks.

Although the built-in bluetooth feature on AVRs is designed to stream "to" the AVR, you can also buy a 3rd party stand alone bluetooth receiver or transmitter adapter to connect to any AVR.
