First, I am sorry if this is a really rookie/dumb question
If I were to hook up an amp via the pre-outs to my Onkyo 805, which is rated at 130 watts per channel, with an amp rated at 100 watts per channel would I be pushing 230 watts to my speakers? or just 100 from the amp? Thanks

You only want to hookup the external amp to the speakers for those channels you want to run into the external amp. You will not hook up speaker wire to those channels you are using the preouts from.

My Yamaha continues to power up the channels connected to my external amp. If you can turn off the amps on a per channel basis, you may want to do so. At very least, it might make your amp run cooler.
