I have a simple 6' run from a DVD player, through the wall, and up to an LCD television. The video signal is component. I have 5-wire RGBHV Belden 1279R (25 AWG) cable and Neutrik RCA crimp connectors. I plan to use the black and yellow cables for stereo audio.

I've done this MANY times before in a rental and staging environment, although those cables had BNC termination and I simply added RCA adapters.

Is there some level of significant attenuation and/or impedence issues in this short of a run by sending audio in this manner?

no problem at all. done it for years.

Please qualify. I've done it for years, too, but I have an AV engineer at a new company I'm working with who exclaimed rather loudly and vociferously that "you just DON'T do that". He's a very intelligent engineer, but he tends to favor over-engineering and his philosophical approach is that "simple solutions must always have some error in use".

Did he elaborate about why you "just don't do that"? Half the consumer CATV boxes on the planet are connected this way. Here's an example of the type of cable Comcast installs. It's just five color-coded RCA cables in one...nothing special.

Your engineer is probably getting somewhat anal about the 75 ohm rating on the cable, but at audio frequencies and at a length of 6 ft there is zero problem.

No, not unless you conflate 'anal' with ignorant. There is no reason at all why you can't use this cable for audio. In fact, there are many good reasons why you should compared to many other cables. a 75ohm video coax is perfectly appropriate for audio, and is often a good choice for an unbalanced run.

Unless he gives a reason why not, do it. The only reason I can think of is perhaps preferring a twisted pair with a separate shield with a drain wire, which can help better with some kinds of interference. For such a short run though, not really concerned. "just because" is not a sufficient reason, and is also called BS.
