I have gutted my livingroom and looking for wall plates that will allow me to run HDMI cable, CAT6 wire, coax cable, audio and video wire. Any suggestions where to look and would it be better to run CAT6 wire instead of HDMI cable.

That depends on how long the HDMI cable run(s) will be, and how difficult the run is. For runs under 25', a good quality HDMI cable will do just fine. 25-50' is getting into the questionable ranges - so use a known high quality cable, or switch to powered HDMI-over-cat5 extenders. Anything longer than that, highly recommend the extender solution - and in all cases, an extender product based on HDBaseT will be the most reliable solution.
