Two questions...

For the rears, is it best to place the in ceiling speakers directly overhead of the couch firing down onto the listener, or should they be a few feet behind the listener pointing the tweeters at an angle towards the couch?

Secondly, my receiver can do 7.1, any benefit to doing the 6th and 7th speaker in ceiling in the back of the room as well, or would the added benefit not be worth it?

Yep, you NEVER want your speakers on top of you, otherwise you'll think you're being invaded by space aliens. if you want to do 4 surrounds, the sides should be at least 10~15* rotated behind the center front seat, then the backs at least 4 ft behind, 7 ft would be even better, spread about 6ft apart.
