Read on the internet about using Cat5 cable to wire up a VGA lead to a projector. The person writing the article said that picture quality was very good, suggesting the twisted pairs helped greatly reduce interference.

Has anyone tried this or got any ideas before I go ahead and try it?

Yes, there's a very old and long thread by MrWigggles that specifies how to do it. Many people have reported good results, but it also depends on your soldering skills. You have to use shielded cat-5e or it will not work, because the shield is used as a conductor.
