Which cables are better can start "fist fights" on the AVS forum, so duck if the sparks start to fly.
I can't talk to your specific game, but in general, there is a chance that your pretty game with composite cables won't look as good with clear, crisp component cables. Sometimes there are jaggies, or weird pixelizations that are small enough not to be really noticed with composite cables. However, when you see every detail with your component cables, those little nuances are clearly visibile. This happens on Xbox, PS2, Gamecube, and DVD's (although early PS2 games are usually the worst offenders).
