I think it depends on what you are inputting to the TV at the time. Sometimes I can, and sometimes it's not selectable. I basically leave it on auto, though.

I have tried component, DVI, and s-video and still can not change it

I cannot adjust it through the HDMI. However, I can change it when using my DVD player which goes in through input 1 component and then it stays in that mode for my HDMI input.
