Is it possible to make compilations of my DVD-A collection and keep it in 5.1?

If yes, How?

Very Very difficult. The format is copy protected, there was a hacked release of WinDVD that would leak the tracks to PCM which could then be recombine with one of various expensive audio authoring tools into your own DVD-A. In short, not worth the effort.
