The DVI standard incorporates analog as well as digital signals. So, no, you aren't somehow going to get an all digital signal over EVC just by taking a signal from a DVI output. The DVI output gives both digital and analog signals.

For example, some of the video cards with dual monitor capability have only a single VGA and a single DVI connector on the card. But they include a DVI/VGA adapter so that they can be used with a dual VGA (i.e., dual analog) setup.

Also, I believe a few projectors come with a DVI input, but without a VGA input (Infocus 350?). On these projectors you can still use an analog VGA signal from the video card by using the projector's included VGA/DVI adapter. In this case, you're using the projector's DVI input, but you're still only transmitting an analog signal. DVI accommodates either.
