DVI outputs that support HDCP copy protection are on devices that can be told whether or not to allow copying or storing of video data. If the device also supports analog connections like component video, it can be told to deliver a lower-resolution image through the analog connections.
It's not whether they are monitoring what you are watching or not, it's that they can control what the device does with the video through different ports.
