Just curious how people with receivers, wiis, xbox kinects, etc. in a different room are extending the wires for the audyssey mics and "eyes" from gaming systems?

Would there be any issues in doing this? For example delays in time since the wire would be longer and resistance would be increased? I was thinking of leaving CAT6 wires near the screen for gaming eyes and the calibration mic or should I be doing something else?

There should be no issues because of wire length.

I have this problem solved in one unique way. My AVR is in the room (a closet) behind the wall where the TV is. I've installed a short length of 2 or 3 inch PCV pipe though the wall behind the TV. All of my wires, including the mic for equalizer adjustments pass through this hole.
