I'm about to receive a hanging screen. If I decide that I'm unhappy with the whole roll-down screen thing, is there any reason I couldn't cut the screen free of the roller bars and attach it to a frame or a wall in some other fashion?

Also - If the screen ever gets wrinkled, is there anything I could do to flatten it out again? Maybe just keep it in the "fully down" position and let the weight of the bottom bar work on it?

Others have removed pull down screens and remounted them with good results. Depends on your skills with creating a frame and mounting the material to it. It is usually a two person job to get it stretched and attached. Do a search here on frames to get some ideas. If you want to keep the pull down you get try adding some tension by attaching bungie cords to the ends of the bottom bar of the screen. Not great aesthetics however. As for wrinkles depends on your material and luck. Another good search topic as there has been a lot of discussion here.
